Seasonal Spring Chicken Casserole with Lid Sid
For all foodies out there, the best thing about spring time (besides the heaps of chocolate eggs) is the bloom of super seasonal spring veg. We’re talking about spring onions, spring beans and everyone’s pal, asparagus. With our spring chicken casserole you can relish the nature-friendly benefits of eating in season and enjoy the company of Lid Sid; a little man shaped device that bravely lifts the pot lid to let out your casserole’s steam. So forget casseroles being just for winter, after gobbling down this light, one-pot packed pesto casserole you’ll most definitely be left with a seasonal spring in your step!
- Olive oil
- 1 large onion
- 500g boneless, skinless chicken thighs
- 300g small new potatos
- 425ml vegetable stock
- 350g broccoli
- 350g spring greens
- 140g petit pois
- 1 bunch of spring onions
- 2 tbsp pesto
- Asparagus (optional, served on the side)
With the help of Oiladdin, pour just a drizzle of olive oil in a large, heavy pan and add the diced onion, gently frying for 5 mins until softened. Then add the spring chicken and fry until lightly coloured.
Next, add the potatoes, stock and plenty of freshly ground black pepper and bring to the boil. Whilst boiling, go fetch Lid Sid, your new best bud in the kitchen, and place him on the side of the pan, under the lid. Sid will helpfully let out all the steam whilst locking in the flavours for the next 30 mins until the potatoes are tender and chicken is cooked. Whilst simmering you can spring into action with your spring veg as you chop the broccoli, spring greens, petit pois and spring onions. And this to your pot, stir well, then return to the boil. Cover with a lid with handy Lid Sid’s help one final time and simmer for 5 mins more before adding the pesto.
When serving, if you’re feeling extra seasonal then steam the asparagus on the side then gobble it down and become full of the joys of spring!
