Tell everyone to bring something but that it’s “sooooo casual” and “not to go out of their way” baking complicated recipes. Then turn up with these ‘Secret recipe’ personalised peanut butter cookies. They might hate you for creating such delicious baked treats with ease but it’ll be because they’re jealous and we can deal with jealous hate when there are biscuits to be eaten. Shake it off, shake it off.
Message Rolling Pin Peanut Butter & Chocolate Chip Cookies
- Message Rolling Pin
- Cookie Cup Cookie Cutter
- Baking tray
- Baking parchment
- 8 tbsp flour
- 1 tbsp brown sugar
- 1 tbsp sugar
- 2 tbsp crunchy peanut butter
- 20 g chocolate chips
- 1 egg yolk (Yolkpig Egg Separator will help)
- 1 tsp vanilla
- ¼ tsp salt
- 50 g butter
- Icing sugar for decoration
1) Preheat the over to 180°C. Place the flour, sugar, peanut butter, egg yolk, vanilla, salt and butter in to a mixing bowl and combine using a hand mixer or food processor until a smooth dough forms.
2) Add the chocolate chips to the mixture and stir in well.
3) Form the dough into a ball, then start rolling out on a floured surface using the rolling pin with no silicone cover.
4) When it’s roughly 1-2 cm thick, rinse your rolling pin and dry – then pop on the silicone message sleeve of your choice.
5) Roll the message rolling pin over the dough in one deliberate movement, pressing hard enough to leave an imprint.
6) Cut into cookie shapes with Cookie Cup Cookie cutter, or a even an upside down wine glass. Dust with icing sugar, place in the oven and bake for 10-12 minutes or until golden brown.
7) Make a cup of tea and eat them all. If you can bear to share them, you’re a better person than we are…
